Pastinaca sativa
Direct Seed: Direct seed when soil temperature has reached 55° F. Keep soil moist until seeds have germinated, which can take up to 4 weeks. Do not let soil dry out. Especially if planting pelleted seed.
Spacing: Sow seeds 1” apart. Thin to 3” apart in rows that are 18-24” apart, at a depth of ½-¾".
Growth needs: Grows best in well-drained, deep, loose, sandy loam soil.
Harvest: Parsnips require cold weather and frosts to attain their sweetness. Dig some roots to check for desired sized to determine when ready. Tops can be mowed. Undercut or dig with a potato fork to loosen dirt and minimize root breakage.
Storage: Roots can be kept in the soil and dug as needed in climates where the ground doesn’t become frozen in the winter. Can be stored clean or dirty at 32° F at 95% humidity.
